Creamy Penne with Sausage-
1 package of mild Italian sausage, casings removed
1 large onion chopped
1 and1/4 cups whipping cream
3/4 cup chicken broth
2 cups frozen peas
2/3 cup mascarpone cheese OR 6 TBSP cream cheese and 5 TBSP whipping cream
16 ounces penne pasta
3/4 cup Parmesan Cheese
1 tsp salt
1/4 tsp pepper
Several dashes of italian seasoning, basil leaves and oregano
Brown the sausage over medium-high heat until brown and crumbly.
Place sausage in a bowl and reserve 1 TBSP of drippings in the pan.
Add onion to saucepan. Cook until golden. Add cream, italian seasoning, basil leaves and oregano. Simmer until slightly reduced. Add broth. Simmer until thickened.
Return sausage to saucepan. Bring to a simmer. Add peas and mascarpone (Or cream cheese and cream combo). Cook uncovered, until peas are tender.
Meanwhile cook the pasta and drain.
Combine pasta and sauce in a larger serving bowl. Add Parmesan, salt and pepper. Serve to Blend and serve immediately and say, "Git in MAH Belly."
